After all, there’s a lot of planning that has to take place for one to be successful. First off, before you plan your menu you’ll need to decide on whether or not you’re going to incorporate a theme. Themes can be good and bad. They’re really fun but can also require a lot more planning. Your theme could be something like breakfast for dinner, or tastes of India, then you could also have themes modeled after favorite television shows like “Mad Men” or “Downton Abbey”. You can also model your themes after sporting events like baseball or NASCAR.

After settling in on your theme, move on over to your menu. Your menu should be something fun and easy that goes along with your theme. Use Google to search for recipes that will complement your theme. You’ll be amazed at the resources you have available at your fingertips.

Make sure you send out your invitations with lots of time for RSVPing. You’ll want your guests to have enough time to make plans to get a sitter if this is not a kid-friendly event. Plus, you’ll need enough time to get an accurate headcount before you head to the grocery store. Include any special instructions for your guests, such as if it’s a BYOB affair, or if you would like guests to bring a dessert.

Next, when it’s time for the event, have a place for your guests to mingle. You’re probably not going to have everything ready to go right away so having a meeting and socializing space for everyone to hang out until you’re ready to serve is ideal. Otherwise, you’ll have lots of people in the kitchen trying to “help” out, which is unprofessional. Having an outside bar setup is a perfect option to keep your guests occupied. The tables were set up with beautiful linens, elegant plate settings, and lovely centerpieces with flower arrangements of roses and other greenery.

For cocktail hour we served one of our hottest and most requested appetizers. These chicken and mango salsa stuffed phyllo cups are always a big hit!

For dinner, we served a smorgasbord of tasty foods. We started off the buffet with this gorgeous spring salad of fresh greens, cherry tomatoes, cucumbers, carrots, and more.

We also had this great macaroni and cheese bar with all the fixings including diced ham, bacon, chives, and different types of cheeses.

Also on the buffet was a colorful medley of roasted vegetables, a NY strip carving station, and stuffed chicken breasts in a creamy pesto sauce.

For dessert, all the guests got to enjoy a piece of this beautiful wedding cake. It was almost too pretty eat!

Highlights | North Carolina Botanical Garden

For cocktail hour, the guests were greeted with a Southern favorite, Fried Green Tomatoes with Roasted Sweet Pepper Aioli, along with a colorful tray of Imported and Domestic Cheeses with Assorted Gourmet Crackers garnished with Seasonal Fruits.

For dinner, the buffet started with a beautiful spring salad consisting of Crisp Romaine with Fresh Strawberries, Feta Cheese, and Walnuts Tossed in our Tangy Balsamic Basil Vinaigrette dressing.

We also served these Lightly Seasoned Green Beans, which paired wonderfully with the carving station.

One of the menu favorites was this interactive Creamy Mac and Cheese Bar. Toppings for the station included: Shredded Cheddar Cheese, Blue Cheese Crumbles, Fresh Cut Chives and Bacon Bits, Diced Smoked Ham, Fresh Green Onions, and Diced Fresh Tomatoes.

Anchoring the dinner buffet was Chef James manning the Carving Station. Guests enjoyed this tender BBQ Beef Brisket which was served with Fresh Assorted Rolls and Sweet Cornbread. For dessert, everyone enjoyed the lovely and delicious wedding cake.
